Chef Market Dinner with Brad Cumming at Edible Canada

In one of my favourite places in Vancouver, Edible Canada is a Bistro and artisan food retail store in the heart of Granville Island. Most people don’t know this, but the restaurant is also home to a very unique custom demo kitchen equipped with cameras and TV screens.  Throughout the year, Edible Canada will host top guest chefs from across the province for Guest Chef Market Dinners and welcome 24 lucky guests into the dining room. Guest can ask questions, watch chefs cook right in front of them, hear and smell everything happening and take in a fun cooking demonstration.

These special dinners will welcome top chefs to cook live in front of 24 guests, who will enjoy multi-course seasonal dinners paired with rare Canadian wine, beer and spirits.

I recently attended a Market Dinner featuring Chef Brad Cumming of the Westin Resort and Spa in Whistler. What made this dinner so special was that each dish had a component of locally sourced maple syrup. The maple syrup was from a maple tree called Big Leaf Maple in Squamish, BC, and is very limited- we were lucky to try it!

Here is what was on the menu:

Table snacks – Welcome cocktail Maple Whiskey Sour with a maple sugar rim paired with Roasted Olives and Almonds and Flatbread and tomato eggplant dip.

1)Maple Speck and house made lemon Ricotta

2)Maple Glazed Haida Gwaii Halibut, morel mushrooms, green bean and scallion salad paired with Rootstock (Mission Hill brand) Chardonnay 2012

3)Crispy Quail and Waffles, multi-grain waffle, maple grape reduction paired with Stoneboat Faux Pas Rose 2011

4)Grilled Venison Chop, spring sauté and apple maple gastrique paired with Syncromesh Spare Parts Merlot 2011

5) Bartlett Pear Bread Pudding with maple vanilla sauce paired with homemade whiskey cream

Each dinner is $80 per person and takes place from 7-10pm. Tickets to each dinner are limited as there is only space for 24 people.
